When Do Romanians Have Fish Roe Spread?
Fish roe spread, frequently made with carp roe, is a staple at Romanian celebrations: Christmas, Easter, weddings, or even weekend lunches with family. Its luxurious texture and refreshing taste make it the perfect appetizer.
Easy Romanian Fish Roe Spread – My Granny’s Authentic Recipe
Ingredients (Serves 4-6):
100 g carp roe
3-4 slices of bread (with crust; you can use just the crumb if preferred)
300 ml sunflower oil (or more, depending on consistency)
4-6 tbsp sparkling water
Juice of 1 lemon
1 onion, finely chopped
Olives and parsley for garnish
Instructions:
1. Soak the bread
Soak 3-4 slices of white bread in cold milk.
2. Whisk the carp roe
Place the carp roe in a bowl (pre-cleaned and salted roe works best) and whisk for 1-2 minutes.
3. Whisk in the bread
Squeeze the bread well and add it to the roe. Whisk for another 1-2 minutes until smooth.
4. Add a little lemon juice
Gradually add a bit of lemon juice.
5. Incorporate the oil
Start incorporating the oil, one spoonful at a time. Add it slowly; too much at once can cause the mixture to separate.
6. Alternate oil and lemon juice
Once the spread turns pale and fluffy, alternate between adding oil and lemon juice.
7. Add sparkling water
When the mixture becomes thick, incorporate sparkling water (2 tbsp at a time) to make it airy and light.
8. Add the onion
Mix in the finely chopped onion (squeeze it if you blend it) until fully combined.
9. Garnish
Garnish with olives and parsley, or any other pickles you want.
