Grandma Victoria’s Recipe: Fried Carp with Mujdei and Polenta
Ingredients:
2 large carp rings
Salt
Pepper
Fish seasoning
Lemon for serving (optional)
Method:
1. Wash and thoroughly clean the carp, removing all scales.
2. Pat dry with paper towels.
3. Generously season with salt, pepper, and fish seasoning.
4. Let the carp sit for 20 minutes to absorb the flavors.
5. Mix cornmeal and wheat flour in equal amounts (adjust to your preference, using more flour if desired).
6. Coat the fish pieces in the mixture, shaking off excess flour to avoid burning.
7. Heat oil in a deep skillet (180°C is ideal). The oil should fully cover the fish.
8. Fry each side for 2–3 minutes, ensuring a golden crust.
9. Remove and place on a plate lined with paper towels.
10. Serve with lemon wedges, mujdei, and polenta.
Mujdei (Garlic Sauce)
Ingredients:
2 heads of garlic
Salt
Vegetable oil
Vinegar or lemon juice
Sparkling water
Method:
1. Use a mortar and pestle to crush the garlic.
2. Gradually add oil in small amounts while mixing.
3. Add salt and lemon juice (or vinegar) to taste, continuing to mix.
4. Finally, stir in 1 tablespoon of sparkling water for a creamy texture.
