CHICKEN WITH VELOUTE SAUCE INGREDIENTS
50 g butter
50 g flour
500 ml chicken stock
salt to taste
lemon juice or vinegar
1 egg yolk
CHICKEN WITH VELOUTE SAUCE METHOD
1. Melt the butter and add the flour. Cook for about 2-3 minute.
2. Start adding the cold stock in batches, cooking over medium heat and adding the next batch of stock once the previous one has been absorbed and thickened.
3. In a bowl, mix the egg yolk with the vinegar and a pinch of salt. Temper with some of the prepared sauce. Return the tempered portion to the remaining sauce. Mix well. Cook for 2-3 minutes.
4. Serve with preheated chicken or warm the chicken in the sauce.
5. Serve with some parsley and lemon zest.
