A healthy char siu that makes lean pork incredibly juicy
Simmering pork in Calpico, seriously?
It’s surprisingly easy, yet rivals classic char siu.
Even lean pork turns out tender and moist.
Calpico is a Japanese yogurt-flavored drink that helps keep lean pork juicy and tender when simmered.
Ingredients (Serves 2–3)
Lean pork (pork round): 500 g
Garlic: 2 cloves
Ginger: same amount as garlic
Calpico (concentrated): 500 ml
Soy sauce: 250 ml
Black pepper: to taste
Instructions
Prick the pork generously with a fork, focusing on the sinewy areas
Place the pork, garlic, and ginger in a zip-top bag and marinate with extra Calpico (not included in the measurements) for 2 hours
Remove the pork and set the garlic and ginger aside
Sear the pork on all sides in a frying pan until nicely browned
Add Calpico, soy sauce, garlic, and ginger, then simmer
When the liquid reduces to about half, remove the pork
Add black pepper to the sauce and reduce further
Slice the pork, pour the sauce over it, and serve
Honest notes
This is not a melt-in-your-mouth fatty style
Best for those who like a firm, meaty texture
Still very satisfying for a lean char siu
