🍳 Ingredients (Serves 1–2)
• Daikon radish … 4 cm (about 1.5 in)
• Canned mackerel … 1 can
• Green onions … 2 stalks
• Sesame oil … 1 tbsp
• Sugar … 1 tsp
• Dashi powder … 1 tsp
• Water … 200 ml
• Cooking sake … 1 tbsp
• Mirin … 1 tbsp
• Mentsuyu (Japanese noodle soup base) … 1 tbsp

🔪 Instructions
1️⃣ Peel the daikon thinly, slice into 1 cm rounds, then cut into quarters
2️⃣ Heat sesame oil in a pan, add daikon, and lightly brown both sides. Sprinkle with sugar and dashi powder
3️⃣ Add water, sake, mirin, mentsuyu, and the liquid from the canned mackerel
4️⃣ Add chopped green onions, cover with a drop lid, and simmer for 5 minutes
5️⃣ Serve and enjoy
