In this video I am brewing a Shincha from Uji, Kyoto, Japan
Shincha is the first flush of Japan; this one comes from a micro plantation in Uji and was made using the most traditional tools the farmer have, his hands!
Temomi (Hand picked) and Tedzumi (Handmade) teas are difficult to come by in Japan as most of the teas are harvested and processed by machines - however some micro plantations would occasionally produces such tea and they are considered as the artisanal japanese teas
This one was gifted to me by the lady whose family has been guarding a temple in the Fushimi Inari, Kyoto - every spring the maker of this tea would come there and presented the tea as a gift to this lady and her daughter
I find this tea quite special, not only because how it got into my hands but also because it performs beautifully even in 100C water
However in this video I am demonstrating a way to brew Japanese teas so that you can avoid the astringency and bitter taste due to overheating or over brewing the tea
The flavor of this tea is not just very umami but also flowery, fruity, and it has a very long finish
