Philly Cheesesteak Bowls:
1 bag Green Giant Cauliflower Risotto Medley
6 ounces protein of choice (I used venison)
50 grams onion
50 grams green bell pepper
100 grams sliced mushrooms
4 tablespoons beef broth
2 teaspoons worcestershire sauce
45 grams shredded cheese (I used Trader Joes light mozz)
**Microwave cauliflower blend. Dump in bowl. Brown ground beef with onion/pepper/mushrooms. Drain. Add beef broth & worcestershire sauce and cook medium heat until thickened. Pour on top of caulirice. Add shredded cheese. Top the day of eating with 40 grams fresh avocado.
*This bowl with avocado was 510 Cal*
Wonton Bowls:
1 cup cauliflower stir fry (I used Trader Joe's)
6 ounces broccoli slaw
7 Trader Joe's Chicken Cilantro Mini Wontons
100 grams sliced mushrooms
200 grams shrimp
*Optional toppings*
130 grams diced cucumber
8 grams diced green onion
2 tablespoons Great Value wonton strips
42 grams sliced fresh avocado
1 tablespoon Trader Joe's sweet chili sauce
1 tablespoon teriyaki sauce (I used Primal Kitchen No Soy Island)
*Saute the broccoli slaw and mushrooms. Once cooked down, add teriyaki sauce & shrimp. Cook shrimp for just a few minutes. While the veggies/shrimp cook, air fry your wontons. 400 degrees for 5-10 minutes. In a bowl, add veggies/shrimp..then top with wontons. The day of eating add the optional toppings. **This bowl with toppings listed was 536 Cal*
