Today, we are preparing a dessert that is a vital piece of our "Culinary Social Memory" — the traditional Lauki ka Halwa (लौकी का हलवा)
This recipe belongs to the "Edible Archive" of our ancestors, reflecting the principles of the Slow Food movement by using sustainable, local ingredients and patient, traditional methods
The Heritage Recipe:
1. Preparation: Begin by washing and peeling the Bottle Gourd (लौकी), then grate it finely.
2. Roasting: Heat Clarified Butter (घी) in a Deep Pan (कड़ाही) and add the grated (लौकी).
The Scent of Tradition: Roast on Medium Heat (मध्यम आँच) until the color shifts to a beautiful Almond Hue (बादामी) and the kitchen is filled with a rich aroma.
Simmering: Pour in the Milk (दूध) and mix well. Once the (दूध) begins to boil, add Cashews (काजू).
Absorption: Continue to cook patiently until the (दूध) is completely absorbed by the gourd.
Traditional Sweetening: For a healthier, traditional sweetness, add crushed Rock Sugar (मिश्री) and Raisins (किशमिश). Mix thoroughly as it thickens.
The Finishing Touch: Once the Ghee (घी) begins to separate and glisten, stir in a splash of Screw Pine Water (केवड़ा जल) for an authentic fragrance and serve.
