This is one of those Blue Curacao cocktails that not only looks great but tastes great too. BLUE MOJITO

4-6 mint Leaves
2 oz/60 ml White Rum
.75 oz/22.5 ml Simple Syrup
1 oz/30 ml Lime Juice
.25 oz/7.5 ml Blue Curacao
2 oz/60 ml Soda Water

Method

1. Slap Mint and add to shaker tin.
2. Add remaining ingredients except Soda Water to shaker tin.
3. Shake with ice for 10-15 seconds.
4. Fine strain over fresh ice into glass.
5. Top with soda water.
6. Garnish with a Mint Sprig.
