Ingredients (for 2–3 servings):
1–2 potatoes, finely chopped
A handful of spinach, finely chopped
1 onion, chopped
3–4 green chilies, chopped
Fresh coriander leaves, chopped (a small bunch)
Spices:
1 tbsp cumin seeds
1 tbsp red chili powder
1 tsp turmeric powder
1 tbsp chili flakes
1 tbsp salt (or to taste)
1 tbsp coriander seeds
1 tsp pomegranate seeds (anar dana)
1 tsp carom seeds (ajwain, helps digestion)
1 cup all-purpose flour (maida)
A little water (as needed for binding)
Oil for deep frying
Method:
Prepare the vegetables:
Finely chop the potatoes and spinach.
Chop the onion, green chilies, and coriander leaves.
Mix the spices:
In a large bowl, combine cumin seeds, red chili powder, turmeric, chili flakes, salt, and coriander seeds.
Lightly crush the spices with your hands or a mortar for better aroma.
Combine ingredients:
Add the chopped vegetables and herbs to the spices.
Mix in pomegranate seeds (anar dana) and carom seeds (ajwain).
Form the batter:
Add 1 cup of all-purpose flour (maida) and a little water.
Mix everything into a thick batter that holds together but is not too runny.
Fry the pakoras:
Heat oil in a pan on low flame.
Drop small portions of the mixture into the hot oil.
Fry until golden brown and crispy on all sides.
Serve:
Remove and drain excess oil.
Serve hot with chutney—pakoras are a favorite for Iftar!
