Hot Honey Chicken Mini Sliders + Biscuits
Makes ~12 sliders
Ingredients
Chicken
2–3 lbs boneless chicken thighs
2 cups buttermilk
Wet mustard
Thyme
Dry Coating
2 cups flour
¼ cup cornstarch
1 tsp smoked paprika
1 tsp cayenne
2 tsp salt
1 tsp black pepper
Dry mustard
Biscuits
2 cups all-purpose flour
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
½ cup cold butter, cubed
¾ cup buttermilk
Hot Honey Glaze
½ cup honey
2–3 tbsp hot sauce
1 tbsp butter
Toppings
Pickles or quick slaw (cabbage + carrot + vinegar dressing)
Method
Brine Chicken
Soak chicken thighs in buttermilk with wet mustard and thyme for 1–2 hours.
Make Biscuits
Preheat oven to 425°F.
Mix flour, baking powder, baking soda, and salt. Cut in cold butter.
Stir in buttermilk until dough forms.
Form mini biscuits and bake 12–15 minutes until golden.
Coat & Fry Chicken
Mix flour, cornstarch, paprika, cayenne, salt, pepper, and dry mustard.
Remove chicken from buttermilk and dredge in flour mixture.
Fry in 350°F oil until golden and cooked through, about 6–8 minutes per side.
Hot Honey Glaze
Warm honey, hot sauce, and butter until combined.
Assemble Sliders
Toss fried chicken in hot honey glaze.
Place on mini biscuits and top with pickles or slaw.
Drizzle extra glaze if desired.
