On this episode of Cookin’ with Tee, I’m making my Gumbo Collard Greens and showing y’all how we serve it at SoulPhil — with a little twist that everybody pulls up for and loves.
This dish brings together classic gumbo flavors, slow-cooked collards, and a rich roux, served over rice just how we do it during the residency. I’m also sharing a fun mini demo where we roll the gumbo + rice into lumpia for a playful bite — but don’t worry, the gumbo stays the main character.
Perfect for cold nights, big pots, and feeding people with love.
🛒 Updated Shop List
Protein & Sausage
1 lb andouille sausage, diced
1 lb crab meat (fresh or lump, optional: crab claws)
Vegetables (Holy Trinity + Collards)
1 large onion, diced
1 large green bell pepper, diced
3 celery stalks, diced
4 cloves garlic, minced
1 shallot, minced
1 lb collard greens, chiffonade
Liquids & Stock
4 cups stock
2 cups water
1 Tbsp tomato paste
1 Tbsp Worcestershire sauce
Roux
½ cup flour
½ cup vegetable oil or butter
Seasoning & Spice
2 tsp smoked paprika
1 tsp cayenne (adjust to taste)
2 tsp onion powder
2 tsp garlic powder
1 tsp pepper
1 tsp minced onions dried
1 tsp seasoning salt
1 bunch thyme
2-3 bay leaves
1 tsp thyme
2 bay leaves
Salt & pepper to taste
Hot sauce (optional)
Rice + Lumpia Demo
Cooked rice (for serving)
Lumpia wrappers (1 pack)
Eggs (for egg wash)
Spicy suka
Extras / Garnish
Green onions, sliced
🔪 Prep List
Meat: Slice sausage, prep crab
Veggies: Dice onion, bell pepper, celery; mince garlic; chop collards
Stock: Make chicken stock if not using store-bought
Roux: Measure flour & oil
Rice: Cook and hold warm; extra for mini lumpia demo
Lumpia Demo: Set up wrappers, eggs, spicy suka
Garnish: Slice green onions
