Yesterday we went cherry picking in Blenheim and brought home a full bucket of sweet, juicy cherries.
Today I’m making one of the easiest and most delicious French desserts — Cherry Custard Pie.
This recipe is simple, beautiful, and perfect for any home cook.
Creamy custard, fresh cherries, and a soft golden top… absolutely amazing!
Ingredients:
• 800 g fresh cherries
• 5 eggs
• 1¼ cups sugar
• 1 cup all-purpose flour (sifted)
• 2 tsp vanilla
• 1 cup milk
• 1 cup cream
• Butter (for greasing)
• Icing sugar (for dusting)
Method:
• Pit all the cherries and place them in a buttered baking dish.
• Blend eggs, sugar, vanilla, flour, milk, and cream until smooth (don’t overmix).
• Strain the custard and pour over the cherries.
• Bake in a water bath at 160–170°C for 1–1½ hours or until the custard is set.
• Cool completely, dust with icing sugar, and garnish with fresh cherries.
