Sachi makes anpan, a soft fluffy Japanese sweet bread with red bean filling.
Anpan
200 g bread flour
2 g salt
4 g instant yeast
100 g warm milk
1 whole egg
10 g soft butter
Yudane
50 g bread flour
50 g water
Red bean filling (An)
200 g adzuki beans
100 g sugar
Egg wash

Rinse beans under cool water. Cover the beans with an inch of water in a pot and bring to a boil. Drain the water. Bring beans to a boil again, and leave to simmer for 1-2 hours or until tender. Keep replenishing water when water gets low. Meanwhile, prepare the dough. Prepare yudane by mixing flour and water together on the stove until you get a sticky thick paste. Set yudane aside to cool. Mix together flour, salt, and yeast. Mix in milk, yudane, and egg. Knead on your work surface until mostly smooth, and then mix in the soft butter. Knead until smooth. Let rest, covered, in a greased bowl for 1-2 hours until doubled in size. Attend back to the adzuki beans. Once the beans are tender and falling apart, add 100 grams of sugar. Mix again with water for another 30 minutes until beans are falling apart even more, and are luscious and creamy. Blend until smooth, adding water to reach the desired consistency. Transfer to another vessel to cool.
Once your dough has risen, punch it down and remove from the bowl onto a lightly floured work surface. Divide into 5 equal pieces, pinch corners together and shape into round balls.
