Anpan (あんパン) is the Japanese name for bread buns filled with sweet azuki bean paste (aka anko or red bean paste). Soft n fluffy milky bread wrapped with warm, moist, gooey, sweet red bean paste in the center...hmmm..Nothing beats these delicious bread that are soft, fluffy, and perfect when you're craving a sweet bread.

Ingredients (makes 6-7 buns: each 3" wide and weighs approx. 60 grams):
2 cups minus 2 tbsps (250g) bread flour *
1 tsp (3g) instant dry yeast
1 tbsp (15g) white granulated sugar (can drop to 20g)
¼ tsp (1g) salt
¼ cup (60g) milk + ⅓ cup (70g) water, heated to ~120 to 130F (lukewarm - microwave 900W for 32 secs) *
½ (25g) egg
2 tbsp (30g) butter, softened
anko, sweet red bean paste
Remaining ½ egg + water (?), for brushing the top
Directions:
1) Mix all dry ingredients (flour, yeast, sugar, salt) in a large mixing bowl
2) Add in lukewarm liquid to flour mixture, reserve a bit of liquid
3) Use a wooden spoon to mix until a rough mixture forms
4) Add in remaining liquid and mix
5) Knead dough for 5 min, or until a tacky dough forms (still sticky)
6) Spread dough out and scatter the butter over the dough
7) Knead the dough for 20-25 min, or until smooth and elastic (window pane test)
8) Form dough into a ball, place it in a bowl, and cover it with a damp towel
9) Let dough rise (1st fermentation/proofing) for 1 hour, or until doubled in size
10) After 1 hr, take dough out and gently punch the air out
11) Divide into 6 or 7 equal pieces
12) Cover the divided pieces with a damp towel once again and let it relax/rest for 15 min (so it’s easier to work with/roll out)
13) Roll each pieces of dough out, place a scoop of red bean paste, and seal the dough up
14) Roll each piece into a round ball and place them onto a baking sheet
15) Spray the surface with water, and let them rise (2nd fermentation/proofing) for 35-50 min, or until doubled in size again
16) Preheat oven to 350F as the dough is rising
17) After 2nd rise, brush the surface of each bun with the remaining ½ egg. Garnish with black sesame seeds if you have.
18) Bake in preheated 350F oven for 15-20 min (exact: 17 min)
Notes:
If you use cups for measuring bread flour, make sure you measure it properly: aerate the flour, scoop flour into the cup, and level the excess off
70 grams of water is not exactly 1/3 cup, but 1/3 cup is just a little more. A tiny bit of extra liquid won't hurt ;)
*To get 1/2 an egg, beat 1 whole egg then measure out 25g or about 2 tbsps of the beaten egg
Store these buns in an airtight container for up to 3 days.
