PISTACHIO SPREAD RECIPE
Ingredients
1. Unsalted pistachios 150 gms
2. White compound chocolate 150 gms
3. Unsalted butter 2 tbsps
4. Full fat milk 1 cup (250 ml)
5. Salt, a pinch
Method
Blanch 150 gms of de-shelled unsalted pistachios and peel off the skin.
Use a dry and clean kitchen towel and pat dry the peeled pistachios.
Take a pan and dry roast the peeled pistachios for a few seconds over a slow flame and once done, remove from the pan and keep aside. Don't roast for a long time.
Take a sauce pan and add 2 tbsps of unsalted butter. Once the butter melts, add 150 gms of chopped white compound chocolate and 1/2 cup full fat milk and cook over a slow flame till the chocolate gets completely melted and dissolved.
Blend the toasted pistachios with a pinch of salt on a high speed with out adding water. Once they get blended to a fine paste, add the warm melted chocolate and blend again. To get the perfect cream consistency, add 1/2 cup of full fat milk and blend again.
Now a smooth, silky, creamy and delicious pistachio cream or spread is ready.
It can be used as a filling in kunafa, Dubai kunafa chocolate, croissants or can be drizzled on ice creams and desserts, as a topping on toasted breads and pancakes and can be blended with fresh fruits for a refreshing smoothie.
For Salankatia Layering
1. Vanilla custard 1 litre
2. Vanilla sponge cake slices as required
3. Water 4 tbsp
4. Sugar 2 tbsp
5. Whipping cream 1/2 cup
6. Nutella 350 gms
7. Kunafa vermicelli 150 gms
8. Milk 1/4 cup
9. Unsalted butter 20 gms + 2 tsps
10. Prepared Pistachio spread
11. Toasted Hazelnuts handful
12. Toasted Pistachios handful
