Ingredients:
1/2 cup (115g) Unsalted Butter, divided
3/4 cup (150g) Brown Sugar, packed
1 can (20 oz) Pineapple Slices (in juice), drained
Maraschino Cherries (optional)
1 1/2 cups (190g) All-Purpose Flour
1 cup (200g) Granulated Sugar
1/2 cup (120ml) Milk
2 large Eggs
1/2 cup (120ml) Pineapple Juice (from the can)
2 tsp Baking Powder
1 tsp Vanilla Extract
1/4 tsp Salt
Instructions:
Preheat oven to 350°F (175°C). Melt 1/4 cup of butter and pour into a 9-inch round cake pan. Sprinkle brown sugar evenly over the butter.
Arrange pineapple slices and cherries (if using) over the brown sugar.
In a large bowl, whisk together the remaining melted butter, granulated sugar, eggs, milk, pineapple juice, and vanilla.
Gently fold in the flour, baking powder, and salt until just combined. Do not overmix.
Carefully spread the batter over the pineapple layer in the pan.
Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10-15 minutes before inverting it onto a serving plate. Serve warm or at room temperature.
PRO TIP: Let the cake cool for just 10-15 minutes before flipping. If it cools completely, the caramel will harden and stick to the pan!
