Описание: In Part 2, watch how Hideo Takamura fixes the chipped knife, while Terukazu Takamura commentates. There are three basic steps involved in sharpening a chipped knife: remove the steel along the largest chip by sharpening at a steep angle, sharpen deep (about half an inch) into the blade and obtain the original hamaguriba/clam shell shape, then sharpen to obtain a cutting edge. You will end up with a scratch on the side of your knife but to maintain the sharp edge of a Takamura, it has to be done! And remember to sharpen both sides equally as this is a sandwiched steel knife. If you sharpen one side more than the other to change the bevel angle, the knife will not be as sharp.
