BANANA CREAM PIE CHAFFLE


Chaffle:

1 egg separated, yolk in saucepan, egg white in another bowl
To bowl with egg white, add 3 tbs super fine almond flour
1 tbs golden monkfruit
1 tbs warm cream cheese
pinch of pink himilayan salt
chopped pecans about 1 tbs
stir well, make chaffles makes approx 2 chaffles


Add egg yolk to sauce pan:
add 1 tbs golden monkfruit stir together



Pudding:
In a bowl
Add 1/4 cup heavy cream in microwavable bowl
heat in microwave till hot

While whisking the egg yolk pour in about half of the hot heavy cream while

whisking continuously. Then add remaining heavy cream combine well.

Return to the stove top and cook on low/med heat. Cook until thickened
Lift off of heat while whisking continuously until thick.

If needed Add 1/4 tsp xanthan gum and stir well to thicken a little more.

Add 1/2 tsp banana extract to pudding stir well and you are done! Taste and

add more if needed.

Optional: Stir in 1/2 tsp of butter

Assemble your chaffles:

On one chaffle, do dollops of heavy cream in a can around

the perimeter.

Add half your pudding to the middle of the pie. Add another dollop of heavy

whip in the middle and ENJOY!
