Wow this one really blew me away! Coconut Creme Pie Chaffle Desert made in my mini Dash waffle maker. So easy, so good and guilt free and YES YOU CAN EAT THE WHOLE THING!

RECIPE POSTED HERE SOON:

COCONUT CREME PIE CHAFFLE

Chaffle Crust
1 egg (APPROX .6 carbs)
separate egg from yolk

In bowl with yolk
add 1 tbs monk fruit sweetener classic
Set yolk aside.

In bowl with egg white
add 3 tbs super fine almond flour (approx 2.25 net carbs)
1 tbs classic monk fruit sweetener
pinch of salt
1/8 tsp xanthan gum
combine well
Make 2 chaffles


In sauce pan
Add 1/4 cup heavy whipping cream bring to low simmer (1.66g carbs)
while whisking quickly, drizzle half of the hot cream into the yolk,
continuously whisking. This is tempering. Then add yolk mixture back into the
sauce pan with remaining heavy cream, mix well and cook about 3 minutes more
until nice and thick like a pudding.
Remove from heat.

Add 1/2 teaspoon coconut extract
1/2 tsp real butter
1/4 cup unsweetened coconut (1.25 net carbs)
combine well.

Serve over your 2 chaffles, garnish with sugar free whipped topping and ENJOY!

CARB COUNT! With the brands that i used here, I calculated this entire chaffle recipe to be approx. 5.76 net carbs. If you split it into 2 servings, then it would be half of that! Depending on which brands you use this will greatly vary, so please calculate your own carb count. Thanks so much for reviewing this recipe I hope you enjoyed it!
