Roasted Pork Loin with Apples and Onions
Prep: 15 minutes plus standing Cook/Roast: 1 hour 7 minutes Serves: 10
5 fresh thyme sprigs
2 Granny Smith apples, halved, cored and chopped
1 red onion, halved and thinly sliced
2 tablespoons olive oil
1 teaspoon salt
¾ teaspoon ground black pepper
1 boneless pork loin roast (about 3 pounds)
2 garlic cloves, minced
½ cup unsalted butter (1 stick), softened
1 tablespoon honey
1 tablespoon stone-ground mustard
2 teaspoons apple cider vinegar
1. Preheat oven to 375°; line rimmed baking pan with aluminum foil. On prepared pan, toss thyme, apples, onion, 1 tablespoon oil, and ¼ teaspoon each salt and pepper; arrange around center of pan.
2. Sprinkle pork with remaining ¾ teaspoon salt and ½ teaspoon pepper. In large skillet, heat remaining 1 tablespoon oil over medium-high heat; add pork and cook 7 minutes or until browned, turning to brown all sides. Place pork on pan in center of apple mixture.
3. In medium bowl, stir garlic, butter, honey, mustard and vinegar; spread ¼ cup over top of pork and roast 30 minutes. Spread pork with remaining ¼ cup butter mixture and stir apple mixture; roast 30 minutes or until internal temperature of pork reaches 145°. Transfer pork to cutting board; loosely tent with foil and let stand 20 minutes. Stir apple mixture with pan drippings; wrap up sides of foil to keep warm. Makes about 2 cups apple mixture.
4. Cut pork crosswise into 10 (½-inch-thick) slices; serve with apple mixture.
