Millets are easily digestible & loaded with nutritious health benefits. This tastes better than Rice dosa & best food for diabetic patients. No fermentation needed! Just , soak, grind & enjoy the dosa. Here is such dosa with millets, dals, broken wheat. Idly Rice /red rice poha is optional! You can also add same proportions of other millets you have at home!
Ingredients: Makes 16 dosas
To soak:
1/3 cup Green gram/Whole Moong dal
1/3 cup Toor dal
1/3 cup Urad dal
1/3 cup Barnyard millet/Kuthiraivaali
1/3 cup Foxtail millet/Thinai
1/2 cup Red rice poha/ sigaparisi aval (Optional)
1/3 cup Broken wheat dhaliya/ samba gothumai ravai
1/3 cup Idly rice(Optional)
Water needed to soak
Other ingredients:
1 tsp Ginger, grated
1 tsp Salt/as needed
1/8 tsp Asafoetida
Green chilli, chopped
1 tsp Cumin seeds
Onion , for adai
Coriander leaves chopped, for adai
🥥Coconut chutney:
•1.5 inch Ginger
• 2 green chilli adjust to taste
• 3 tbsp roasted bengal gram
• 1/2 tsp Salt
• 1 cup Coconut, if using frozen coconut, microwave it for 30 secs.
Tempering:
• 1 tsp Oil
• 1 tsp black mustard seeds
• generous pinch hing/Asafoetida
•Chana dal
• few curry leaves

Notes:
You can add equal proportions of other millets too in this recipe except Finger millet/raagi. Raagi is best when prepared alone. You can give it a try if you want.
Soaking overnight is always better if grinding the batter in your mixi/blender.
You can also make adai out of it with onion, coriander leaves, chilli & cumin seeds
Best when paired with tangy sides like Tomato chutney, Poondu chutney, Onion chutney & Sambar.
