I know that mushroom season is over, however, one can still enjoy this beautiful wild forest mushroom that was hand picked by my lovely friend Eva here in Åland Islands.
If you can't get your hands on this mushroom, of course use any other mushrooms that are available where you are. Also, i decided to use a concentrated stock this time, I noticed that it is commonly used here in Scandinavia , makes it easier and faster :).
This delicious mushroom soup is fast to make and you can switch to a vegetarian stock if you like, and make it vegan too by changing cream to coconut cream. Tune in to my next video, as I will use this leftover soup to make another delicious dish :) . Enjoy.
Kantarellsoppa- Chanterelle Soup
200gm chanterelle mushroom
200ml cream ( 1 cup)
1 whole chopped onion
1182.94 ml water ( 5 cups)
50 gm butter ( 3 tablespoons)
2 tablespoon plain flour
1 teaspoon salt
Black Pepper
1 concentrated beef stock
Note:- You can omit the beef stock to chicken or vegetable stock.
If you use a cube stock just add it in the soup , make sure the crush it first. -You could use any mushroom that you prefer
-You could substitute cream to coconut cream for vegan
