This combination is pretty darn hard to beat — like a comforting hug in a bowl — but is admittedly a bit indulgent. For days when you're looking for something a little less over the top, omit the grilled cheese and instead add a swirl of extra-virgin olive oil and an extra pinch of red pepper flakes if you can handle the heat. Either way, this classic tomato soup is a soul-soothing must make.
My version of this spiced tomato soup i call it instead of spicy, because well...it's flavorful not spicy. The delicious spices will make this soup very delicious and filling no cream added :) Enjoy.

Spiced Tomato Soup & Grilled Cheese : Serving 2-4 persons
2 tablespoons olive oil
2 cloves garlic chopped
1 small yellow onion chopped
1 teaspoon cumin powder
2 (28-ounce) cans crushed tomatoes
375ml water (1 1/2 cups)
1 teaspoon dried basil
1- 1/2 teaspoon sweet paprika
About 2 teaspoons salt to taste
25 gm butter (2 tablespoons)
Freshly ground black pepper
1 vegetable stock or chicken stock
2 tablespoon flour
Grilled Cheese:
Bread
Cheese of your own choice
25 gm butter ( 2 tablespoon)
Method:
Heat the olive oil & butter in a pot over medium heat until shimmering. Add the onions and cook, stirring occasionally, until the onions are translucent, are beginning to brown. Add garlic and cook for 30 seconds. Add the plain flour continue to cook for 30 seconds. Add the spices (cumin, paprika and basil) cook for 30 more seconds.
Stir in the tomatoes and their juices, water, salt, pepper & vegetable stock
and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, about 25- 30 minutes. Once cooked set aside, if you do not like your soup chunky you could by using a blender, puree the soup in batches until smooth. Pour the blended soup through the strainer, pressing on the solids with a rubber spatula or ladle; discard the solids. Taste the soup, and season to taste with additional salt and pepper needed.
Grilled cheese:
Heat a cast-iron skillet over medium-low heat. Add in butter and let it melt. Add in the bread. Add on the cheese to the bread and let it be grilled for 1-2 mins on each side or until the cheese has melted and the bread is crusty and deep golden brown. Serve & enjoy :)
