RANCH AND BACON CHEESE BALL (pg 22)
12oz uncooked bacon (approx 12 slices)
8oz cream cheese at room temperature
1/2c smoked Gouda, finely shredded
3 Tbsp ranch dressing
1/3c chopped fresh chives
Cook the bacon until crispy. Transfer to a paper towel lined plate and set aside to cool.
Combine the cream cheese, Gouda, and ranch in a bowl. With an electric mixer, beat on medium speed until incorporated. Add all but 2 Tbsp of the chives and beat on low speed until just combined. Form the mixture into a ball and refrigerate until set.
While the cheese ball sets, chop the cooled bacon into small pieces. Stir together bacon and the reserved chives on a rimmed plate (the bacon chive mixture can be refrigerated in an airtight container for up to 3 days).
About 30 minutes before serving, remove the cheese ball from the fridge. Roll the ball in the bacon-chive mixture pressing the ingredients firmly to the ball, until completely covered.
SPINACH-ARTICHOKE CHEESE BALL (pg 19)
3 Tbsp olive oil
3 cloves of garlic, minced
1/2c canned or jarred artichoke hearts, drained and coarsely chopped
1/2c frozen spinach, thawed and well drained
1/3c sour cream
1/3c PLUS 1 Tbsp grated Parmesan
1c fine dried bread crumbs
8oz cream cheese, at room temperature
In medium skillet, heat 2Tbsp of the olive oil over medium heat. Once hot, add the garlic and cook until fragrant but not browned, 30 to 60 seconds.
Add the artichoke hearts and spinach and cook until heated through, 2 to 3 minutes.
Turn the heat to low, add the sour cream and 1 Tbsp of the Parmesan, and cook, stirring constantly, until heated through, 2 to 3 minutes.
While the artichoke-spinach mixture cools, toast the bread crumbs. Heat the remaining 1 Tbsp of olive oil over medium heat, add the bread crumbs, and cook, stirring often, until just browned and fragrant, about 5 minutes. Remove from the heat, stir in the remaining 1/3c Parmesan, and set aside to cool.
Combine the cooled spinach-artichoke mixture and the cream cheese in a bowl. With an electric mixer until combined. Form the mixture into mini balls and refrigerate until set. About 30 minutes before serving, remove the cheese balls from fridge and let soften at room temperature. Just before serving, roll the balls in the bread crumbs, pressing firmly until completely covered.
TRAIL MIX CHEESE BALL (pg 66)
12oz cream cheese at room temperature
2 Tbsp (2oz) honey
1c dried fruit, finely chopped (such as cranberries, blueberries, raisins, apricots, etc)
1/4c sweet mix-ins (chocolate chips, coconut flakes, Chex, candied ginger, etc)
1c assorted nuts and/or seeds (pistachio, almonds, cashews, pepitas, etc) toasted
Mix the cream cheese and honey in a bowl with an electric mixer until well combined. With a spatula, stir in the dried fruit and sweet mix-ins until just combined. Form the mixture into a ball and refrigerate until set.
While the cheese ball sets, spread the chopped toasted nuts on a rimmed plate.
About 30 minutes before serving, remove the chilled cheese ball from fridge. Roll ball in the nuts, pressing them firmly into the ball until completely covered.
