Ingredients:
• 1-2 eggs
• ¼ cup shredded mozzarella cheese
• 1 cheese slice
• ¼ cup finely chopped bell peppers (red or green)
• 1 tbsp chopped coriander leaves (cilantro)
• 1 tbsp butter or ghee
• Salt to taste
• Black pepper (optional)
Method:
1. Crack the eggs into a bowl. Add a pinch of salt, chopped bell peppers, and coriander leaves.
2. Whisk well until fluffy and fully combined.
3. Heat a non-stick pan over medium heat. Add butter or ghee and let it melt.
4. Pour in the egg mixture. Let it cook undisturbed for 1-2 minutes until the edges set and the bottom is golden.
5. Sprinkle shredded mozzarella and place the cheese slice on one half. Let the cheese melt for 30-60 seconds.
6. Gently fold the omelette in half with a spatula. Cook for another 30 seconds.
7. Slide onto a plate and serve hot with toast or paratha.
