This is a delicious corn bread recipe that you should try! It’s so fluffly and so good! It’s a very sticky dough ideal for a bread machine or for a stand mixer. I don’t think it would have a good result making it by hands just because we don’t want to add too much flour to it. If you try, please leave me a comment how did you like it!
Ingredients:
Sponge
80g all purpose flour
5g instant yeast
80g milk
Dough
100g canned corn
170g cold milk
1 egg
50g butter – room temp
sponge
420g all purpose flour
75g sugar
25g milk powder
10g salt
egg white to wash
cornmeal to sprinkle
Do not leave the dough to raise inside the bread machine!! Instead, you’re gonna take it out, cover and put it in the fridge for 30min, and then, take it out of the fridge and let it raise 30min more at room temperature. When baking, if you feel like it’s getting too dark, cover it with aluminium foil to finish cooking without burning it!
I used a 30 x 11 x 6 cm mold
Bake 40 – 45 min at 350F
