Welcome to the Discord Mead series! Today we are making a Raspberry Cheesecake mead! Larry has been appointed the leader for this mead and he wanted to make a raspberry cheesecake mead! This brew is quite intricate and uses a lot of ingredients, but it's awesome! You can find the recipe below and I hope you enjoy! Raspberry Cheesecake Mead:
4 lbs of Frozen Raspberries in a brew bag
3 lbs of Wildflower Honey
1/2 tsp of Pectic Enzyme
9 Grams of Bentonite at 24 hours
Water Up to 1.5 Gallons
3 Grams of Lalvin D254
4.6 Grams of Go-Ferm
5 Grams of Mermaid O (in 4 additions of 1.3 grams)
Stabilize with potassium sorbate & metabisulfite (or pasteurize)
6 Graham Crackers
2 Cinnamon Sticks
1 Vanilla Bean
2 oz of Cream Cheese Powder
2 oz of Lactose (Boiled in a small amount of water)
6 oz of Brown Sugar
6 oz of Honey
Sparkolloid to Clear & Keg Carbonate it!
Starting Gravity: 1.076
After Primary: 1.000
Final Gravity: 1.020 - 1.030
