Chicken Tikka Biryani
Chicken Tikka Biryani is a flavour-packed fusion of juicy grilled chicken tikka and aromatic long-grain basmati rice layered with rich biryani masala. Each bite offers the smokiness of tender tikka pieces, the warmth of whole spices, and the freshness of mint, coriander, and saffron. This biryani brings together the charm of tandoori-style chicken and the royal taste of traditional biryani, making it a perfect dish for weekends, gatherings, and festive meals. Serve it with raita, salad, or lemon wedges for a complete irresistible treat!
Ingredients:
For tikka:
1 kg chicken
1 tbsp ginger paste
1 tbsp garlic paste
11/2 TSP salt
1 TSP chili powder
2 TSP cumin powder
Chicken tikka masala
1/2 TSP turmeric powder
2 pinch food color
2 TSP chat masala
2 tsp coriander powder
1 tsp pepper powder
1/2 cup yogurt
1 tbsp lemon juice
2 tbsp butter
Ingredients for gravy:
2 onions
2 tomatoes
3/4 cup yogurt
1 tsp salt
1 TSP chili powder
1 tsp Kashmiri chili powder
1 tsp cumin powder
1 tbsp coriander powder
1 tbsp ginger paste
1 tbsp garlic paste
1 cup oi1 TSP cumin seeds
7-8 clove's
10-12 black pepper
7-8 green cardamom
2 black cardamom
2 inch cinnamon sticks
4-5 green chillies paste
For rice:
1 kg basmati rice
3 tbsp salt
1 tsp caraway seeds
2 inch cinnamon sticks
2 bay leaves
1 tbsp oil
4 liter water
fried onions
mint
coriander leaves
food color
🔥 Process:
Step 1: Marinate Chicken for Tikka
1. Mix yogurt + spices + lemon juice + oil.
2. Add chicken and coat well.
3. Rest for 1–2 hours (or overnight).

Step 2: Cook Chicken Tikka
Pan-fry: Heat 2 tbsp oil, cook chicken on medium flame until charred
Cook till chicken is slightly smoky and done.

Step 3: Prepare Basmati Rice
1. Boil water with salt + whole spices.
2. Add soaked rice.
3. Cook until 80% done (grains still firm).
4. Drain and keep aside.

Step 4: Prepare Layering Masala (Optional but Flavorful)
In a pan:
1. Add 1 tbsp ghee.
2. Add some fried onions.
3. Add the cooked chicken tikka.
4. Sprinkle biryani masala + mint + coriander.
(You can skip this if you prefer a simpler taste.)

Step 5: Layering the Biryani
Use a heavy-bottom pot (handi):
1. Bottom layer: A little ghee + some rice.
2. Next: Chicken tikka + some masala.
3. Add fried onions, mint, coriander.
4. Add rice again.
5. Pour saffron milk (optional) + 1 tsp ghee.
6. Repeat layers until all ingredients are used.

Step 6: Dum Cooking
Seal pot with foil or dough.
Cook on low flame for:
10 minutes on medium-low
15 minutes on low
(Total ~25 minutes)
Turn off heat and rest 10 minutes.
