Akara is a popular Nigerian bean cake made from peeled beans, pepper, and onions, then
deep-fried.
Here is the easy method:
Ingredients
• 1 to 2 cups peeled beans (honey brown beans)
• 2 medium onions
• 1–2 fresh peppers (scotch bonnet or chilli)
• Salt (to taste)
. Builon stock
• ½ cup water (as needed)
• Vegetable oil (for frying)
Step-by-step instructions
1. Peel the beans
• Soak beans in water for 5–10 minutes.
• Rub with your hands to remove the skin.
• Rinse and remove all the skins.
• Drain the water.
(You can also buy already peeled beans to save time.)
Blend the mixture
• Put peeled beans in blender.
• Add onion and pepper.
• Add small water gradually.
• Blend until smooth and thick (not watery).
3. Whisk the batter
• Pour mixture into a bowl.
• Add salt.
• Whisk with spoon or mixer for 3–5 minutes.
This makes akara fluffy.
4. Heat oil
• Pour vegetable oil into frying pan.
• Heat on medium heat.
5. Fry the akara
• Scoop batter with spoon.
• Drop into hot oil.
• Fry for 3–5 minutes.
• Turn until golden brown.
6. Remove and drain
• Remove akara.
• Place on paper towel to drain oil.
Ready to eat!
You can eat akara with:
• Bread
• Pap (ogi)
• Custard
• Garri
• Or alone
