Italy's Basic al Pomodoro Sauce is that one essential fresh tomato sauce that serves as the basis for so many classic Italian dishes: lasagne, eggplant parmesana, pasta pomodoro, pizza sauce and as a delicious broth for soups and white beans. It's a classic tomato sauce. This tomato sauce recipe will become a family favorite.
Basic Pomodoro Sauce
15-20 ripe summer plum tomatoes
1 head garlic
1 bunch basil
1/4 cup olive oil
plenty of sea salt
Cut your tomatoes in half, peel your garlic and place all of the ingredients into a large wide bottomed pan and cook over medium-high until the tomatoes break down, 25 minutes or so. Run the sauce through a food mill and that's it. The sauce freezes beautifully, it cans beautifully and is wonderful fresh from the pot.
