Описание: Fermented Chipotle Cashew 'Cheese' is a wonderful nut based, whole foods, dairy free dip that can be used as a spread or cheese substitute. I eat cheese, so my expectations for dairy alternatives are high. This exceeds them all. It's delicious in everything. Looking for a dairy free alternative to mac & cheese, try this spicy alternative.

INGREDIENTS
13oz/370g/2.5 cups RAW cashews
1 dried chipotle chili (or 1 canned chipotle chili, rinsed)

Soak the cashews and chili in enough water to cover them by 1"/2.5cm for 3-6 days, 4-5 days is Ideal.

1/4 teaspoon dill
1/4 teaspoon ground cumin
4 tablespoons dried chives
1 teaspoon dried parsley
.2oz/6g/1 tablespoon dried onion granules
.4oz/12g/1 tablespoon dried garlic granules
.7oz/20g/4 tablespoons dried sweet red pepper
.3oz/8g/1 teaspoon smoked salt (regular sea salt is fine)
12 black peppercorns (or 1/4 teaspoon ground black pepper)
1/4 teaspoon smoked paprika (optional, if you don't have smoked salt)
1/2 - 3/4 cup soaking liquid

1/8-1/2 teaspoon lemon juice, to taste

DIRECTIONS
Once the cashews have begun to bubble, they are ready to use. Strain off the soaking liquid and set it aside.

Place all of the ingredients, except the lemon juice into the bowl of your blander and blend on high for 5 minutes, stopping to scrape down the sides periodically. Start with 1/2 cup soaking liquid and slowly add more as needed. If you want a thick sauce, add 1/2 cup of liquid, for a thinner sauce add an addition couple tablespoons.

When the consistency is right, taste for salt and spice. If tastes a little flat to you, add 1/8 teaspoon lemon juice, you don't want it sour, you want the acid to make the other flavors come alive.

Refrigerate for up to a week (maybe longer).

This is a wonderful spread on sandwiches, as a dip for fresh vegetables, chips, as a nacho cheese, as a vegan cheese alternative for enchiladas, tossed with pasta, combined with salsa for a dairy free queso, the options are endless. Enjoy it and let me know how you love it most.
