This sheet pan dinner is an easy way to get a well rounded meal on the table without a lot of hands-on time.
The length of the video is the total length of the recipe from washing the veg all the way to serving.We left the camera running for the entire bake time so you can really see how long it will take - prop up your screen in the kitchen and cook along with us.
Feel free to watch the boring behind the scenes action between timers (I am working on getting music for future videos with bake time).
Or go run a load of wash (or re-wash the load you forgot to put in the dryer :) Or read a chapter of a for fun book.
Or brush the dog

We hope you will try this and then adapt it with your favorite vegetables - it's a great way to eat seasonally, just use whatever is being harvested. A favorite regular dish with a nice variety built in.
If you don't have a big baking sheet, you can cut the chicken in half during the spatchcocking and divide everything between 2 cast iron pans, or casserole dishes.
Ingredients:
Chicken - 1 the one we cooked was 3.55 lb - air cooled.
Potatoes - 1 to 1.5 lbs - use whatever kind you like.
Vegetable - 1/2 to 1 lb - we used eggplant as it was in season when we made this. Any root veg will work (radish are surprisingly good roasted) mix with broccoli, cauliflower, Brussels sprouts, beans, etc.
Garlic - 4 cloves
Onion - 1 Medium (baseball size)
Veg marinade:
Lemon Juice - 2 Tablespoons
Neutral veg oil - 3 tablespoons
Kosher salt - 3/4 teaspoon
Pepper - 1/4 teaspooon
Oregano - 1.5 teaspoons (this was for a Greek feel, dill would also be good. Use whatever herbs you like - let your vegetables help you decide.)
Chicken rub:
Kosher salt - 2 teaspoons
Pepper - 1/2 teaspoon
Chicken marinade:
Lemon Juice - 1 Tablespoon
Neutral veg oil - 3 tablespoons
Oregano - 4.5 teaspoons
