In this video, I turn a daikon radish into scallop-like steaks using simple techniques. The daikon is prepared using Japanese knife techniques (katsuramuki) then cooked using a fondant style cooking method starting in a light gelatin-rich broth. After a sear & braise, it's paired with creamy feta cheese, cod roe, and fried garlic.
The result is a delicate, fine dining daikon steak dish with intentionally balanced proportions — one of each ingredient per mouthful, so each bite tastes complete — all without complicated steps or special tools.
This daikon steak recipe is a great fine dining entrée that is easy to make at home.
