Doctor Funk | A Surprising Tiki Cocktail

Описание: This tasty creation was inspired by a cocktail of the same name from the South Pacific, created by famed author Robert Louis Stevenson's doctor Bernard Funk. This drink initially featured Absinthe, lime juice, grenadine, and seltzer water. However, Donn Beach added his flair to the drink and a bit of rum when he placed on his menu at Donn, the Beachcombers in Hollywood, California.

While the drink had almost as many recipe variations as it did names, the one I like the best is one published by Smuggler's Cove, which Martin Cate based on Trader Vic's interpretation.

Doctor Funk

0.5 oz. Fresh lemon juice
0.5 oz. Fresh lime juice
0.25 oz. Grenadine (homemade)
0.5 oz Demerara Syrup (2:1)
0.25 Herbsaint or Absinthe
2.25 oz. Denizen 8-year Rum or a Jamaican Black Pot Still Rum
1.0 oz. Seltzer

Add all ingredients into a drink mixer with 12 oz of crushed ice and a few pieces of larger cracked ice to help with agitation.
Flash blend, then open pour into a Double Old Fashion glass or tiki mug with more crushed ice and garnish with pineapple fronds and a fancy straw.

If you don't have a drink mixer:
Add all ingredients into a cocktail shaker. Also, instead of crack ice pieces, use several medium ice cubes to help mix the drink. Give it a hard shake until you get a good frost on the outside of the shaker (8 to 10 seconds). Open-pour into your tiki mug or glass. Add more ice to fill and garnish as described above.
