Learn how to make a rich and creamy tomato chicken served with fluffy parboiled rice using d’lite Pure Cooking Oil. This easy, flavour-packed recipe is perfect for a quick weeknight dinner or family meal.
Ingredients:
• 100g of cherry/ 50g sundried tomatoes.
• 500g-900g Chicken Fillets.
• One packet of baby spinach or spinach.
• 250ml fresh cream
• 1tbsp Garlic & ginger paste
• 50g tomato paste (One packet)
• 30g Onion powder
• 2 cups of rice
• Salt and pepper to taste
• 30g paprika
• 1 onion
STEP 1: COOK THE RICE
• We start with d’lite Medium Parboiled White Rice.
• Add two cups of rice to a pot, season with a teaspoon of salt, and fill the pot halfway with water.
• Place it on the stove and let it cook until the rice is fluffy and perfectly done.
STEP 2: SEASONING THE CHICKEN
• Season chicken fillets with salt, pepper, paprika, and onion powder.
• Give that a good mix and let those flavors settle in.
STEP 3: BUILDING FLAVOUR WITH D’LITE PURE COOKING OIL
• Heat a pan and add d’lite Pure Cooking Oil.
• Add your thinly sliced onions and sauté until soft and translucent.
• Add garlic and ginger paste.
• Stir through the tomato paste and let it cook for a minute.
• Now add the chicken fillets and cook them on each side until beautifully golden.
STEP 4: CREAMY TOMATO SAUCE MAGIC (±1½ minutes)
• Once the chicken is golden, pour in the fresh cream.
• Add your cherry tomatoes or sundried tomatoes for sweetness and richness, and finish with a handful of spinach.
• Lower the heat and let everything simmer gently for 6 to 7 minutes.
