Ingredients:
• 1 tbsp d’lite pure cooking oil
• 1 small onion, chopped
• 1 cup corn kernels (fresh or canned)
• 1 carrot, diced
• 3 cups vegetable stock
• 1 tbsp 37% fat spread margarine
• Salt & pepper to taste
Method:
1. Heat oil, sauté onion until soft.
2. Add corn, carrot, and stock, simmer 10–12 minutes.
3. Blend until smooth, stir in margarine for richness.
4. Season to taste and serve.
