Let’s get started with these soft, melt-in-your-mouth coconut macaroons 😎
Ingredients:
100 g full-fat shredded coconut
200 g powdered sugar
3 egg whites
1 tsp vanilla
70 g very hot oil
1 tbsp rice flour
1 tbsp lemon juice
Instructions:
Combine the powdered sugar and coconut well, making sure there are no lumps.
Add the egg whites and mix just until combined, then add the vanilla.
Heat the oil in advance until very hot. Add it to the mixture and stir quickly and continuously so the egg whites don’t cook.
The rice flour helps the mixture hold its shape when piping or placing it on the baking tray.
Add the lemon juice to give the macaroons a nice glossy finish.
Refrigerate the mixture for 1 hour, or if you’re short on time, place it in the freezer for 15 minutes.
Arrange the mixture on a baking tray, leaving space between each one, and dust with powdered sugar.
Bake at 150°C (300°F) for 20 minutes.
If you want a golden top, turn on the broiler for the last 2 minutes.
