This deep-fried chicken style called Akbar Joojeh in Iran is one of the best ways to cook chicken — salty, juicy and super soft. Let’s make it together.
✅Brine overnight: Dissolve salt in enough cold water to cover the whole chicken and leave it in the fridge overnight.
✅Drain & dry: Next day, discard the brine and pat the chicken completely dry with paper towels.
✅Saffron rub: Rub the chicken with a little dissolved/crushed saffron for color and aroma.
✅Heat oil: Heat enough oil in a deep pot to mostly submerge the chicken (be careful).
✅Deep-fry: Carefully lower the whole chicken into hot oil and fry until the skin is golden and crisp. Drain excess oil.
✅Finish in butter: Melt butter in a large pan on low heat, add the fried chicken and cook slowly. Add garlic if you like. Cook on low until the chicken is fully cooked and very tender (about an hour, depending on size).

Saffron (crushed or dissolved)
Butter
Garlic (optional)
Vegetable oil for deep frying
Pomegranate paste (sour pomegranate molasses)
Walnuts (ground or finely chopped)
Cooked rice (to serve)
✅✅Make the sauce: Mix pomegranate paste with ground walnuts and stir in a couple of spoonfuls of the butter from the pan.
