Recipe:
8 lbs. Pork Butt
Char-Griller Original Rub
Olive Oil
Use olive for the binder, then cover with the original rub heavily.
Allow the pork but to rest while getting the Flavor Pro up to temp.
Add charcoal and wood chunks to one side of the grill. Bring the temperature up to 250 degrees and cook the pork butt for 1 hour.
Then bring the temp up to 325 - 350 degrees. Spray with chicken broth every hour until internal temperature of 165. Remove pork butt and put in a covered foil pan. Add the reserve chicken broth. About one cup. Cook pork butt until 205 degrees. Let rest for 30 minutes to 1 hour.
