Holiday baking is upon us and I’m in the mood for some hot cocoa, in cookie form! These super easy cookies have the perfect whimsical topping: a toasted marshmallow. Break out the brulee torch and have some fun.

Hot Cocoa Cookies with Toasted Marshmallows
½ cup, 113g, butter, softened ⅔ cup, 154g, white sugar 1 large egg, 50g ½ teaspoon kosher salt 1 teaspoon baking powder 1 teaspoon, 5ml, vanilla extract ½ cup, 60g, powdered milk 1¼ cups, 150g, all-purpose flour ¼ cup, 25g, unsweetened cocoa ⅓ cup, 77g, white sugar 1 tablespoon ground cinnamon 12 regular size marshmallows
Preheat oven to 350°F, 180°C, gas mark 4 and turn on the convection fan, if you have it. Cut 12 marshmallows in half through the middle, set aside. In a large mixing bowl, cream the softened butter and ⅔ cup sugar until it is light and fluffy, about 5 minutes. Add the egg, salt, baking powder and vanilla extract and continue beating until this is light and fluffy, about 4 more minutes, scraping sides when necessary.
In a large bowl, mix the flour, dried milk and cocoa powder until combined. Add the flour mixture to the in two batches. Mix until just combined. Do not overmix.
Mix ⅓ cup sugar and cinnamon in a small bowl. Scoop the dough using a #60 or 2 teaspoon disher, slightly overfilling scoop. Roll into a ball. Place in the cinnamon sugar mixture and coat completely. Place 12 sugar covered dough on a baking sheet lined with parchment paper. Bake each cookie sheet for 8-10 minutes or until cookies are barely set. Remove cookies from oven and immediately press marshmallow halves, cut side down, on each cookie while they are still hot.
Transfer cookies to a cooling rack. Using a brulee torch or butane torch, toast tops of marshmallows blowing out any flames. Serve immediately. Cookies can be warmed for 5 seconds in the microwave to melt the marshmallows if desired.
