Sai Oua: How to Make The Best Northern Thai Sausage in Chiang Mai

On this episode, we learned to make Sai Oua, the Northern Thai sausage also called Chiang Mai sausage.

We are taught how to make sai oua sausages from one of Chiang Mai’s most famous sausage makers, auntie Rod.

Auntie Rod is the queen of Sai Oua and has been featured in chef Gordon Ramsay's TV show.

Guided by A Chef’s Tour, we visit Auntie Rod at her home where she perfected Sai Oua sausage making for over 20 years.

This is Claire and Rosemary from Authentic Food Quest on a mission to explore and showcase the best local foods and flavors of a destination.

The most difficult part of making Sai Oua was to hold the casing and fill it in with the pork and spice mixture. The casing is quite slippery so we were on for some laughs and funny moments.

The main ingredients we used to make Sai Oua, the spicy northern Thai sausages are:
turmeric, shallots, garlic, lemongrass, two two different kinds of Thai chilies, the small spicy ones and the larger ones less spicy, spring onions, coriander and kaffir lime leaves.

And of course minced pork and casings made from real pig intestines.
