Banh tet is a traditional cake popular in the South and Central regions of Vietnam, often made and enjoyed during the Lunar New Year. This is a dish that carries many meanings of reunion, gathering and gratitude to ancestors.
Characteristics of Banh tet:
Shape: Banh tet is long and cylindrical, wrapped in banana leaves and tied tightly with string or nylon string.
Main ingredients: Glutinous rice, green beans and pork (usually pork belly). The cake can have salty or sweet filling depending on taste.
How to prepare: Banh tet is wrapped tightly and is usually cooked by boiling or steaming for many hours (6-8 hours) so that the cake is evenly cooked, soft and fragrant.
Classification of Banh tet:
Salty Banh tet:
Most popular, has smooth green bean filling and marinated pork belly.
Usually served with pickled vegetables, pickled onions or fish sauce.
Sweet Banh Tet:
Mung bean paste mixed with sugar, or banana (ripe banana) wrapped with sticky rice.
Some types are colored with pandan leaves, gac fruit, or butterfly pea flowers.
Banh Tet without filling:
Wrapped with only sticky rice, often mixed with coconut milk, has a naturally fatty and fragrant taste.
The meaning of Banh Tet in Tet Nguyen Dan:
Symbolizing reunion and prosperity: The long, round shape of the cake represents completeness and fullness in life.
Bearing the imprint of regional culture: If Banh Chung is typical of the North, Banh Tet is an indispensable culinary symbol of the South and Central regions.
Expressing gratitude to ancestors: Banh Tet is often offered on the family altar on the first day of the new year.
