The Latin name is "Tuber Melanosporum Vitt" which in Italy is commonly called Pregiato Black Truffle (or winter black truffle) where pregiato means "precious" and is perfect in combination with fresh egg pasta!
With its shape that resembles a small stone and a size between that of a walnut or a mandarin, it is capable of inebriating with its delicate and very pleasant aromatic scent with strong notes of earth and hazelnut. This type of truffle is in fact found near oak and hazelnut trees.
Black Truffle has an exquisite flavor and does not alter even if heated and in fact in this video recipe it is grated in warm butter to create a very delicate cream.
In Italy it is found in Piedmont, Umbria, Marche and Abruzzo, where it ripens from mid-November/December until February/March and develops at a depth of about 10 to 20 cm.
HOW MUCH DOES IT COST? Unlike the rare white truffle, the Pregiato Black Truffle has a much more affordable price which at the time of publication of this video is around €600 and €800 per kg depending on freshness and quality, translating in a range of €10 per person (10gr).
