DRAGON FRUIT FIZZ

Ingredients

2s white dragon fruit
1 red dragon fruit
4-6 tbsps sugar
1 lemon
Ice cubes as required
Lemon slices as required
Fresh mint sprigs as required

Method

1. Peel and cut dragon fruit and chop roughly. Scoop out the red dragon fruit into small roundels.
2. Transfer the white dragon fruit in a blender jar. Add sugar, squeeze lemon and blend finely.
3. Strain the mixture.
4. Add ice in individual glasses. Add the ground mixture, lemon slices, mint sprigs, dragon fruit roundels and some more ice cubes on top.
5. Top up with tonic water and serve chilled.
