Always keep a spare can of tuna or salmon on hand for this light and tasty lasagna. If you are like me and want to cut down on red or fatty meat, then this is the perfect solution. What you don't eat of this can be frozen. This will serve up to 8 people. This is also a great food to take out on a picnic, should the flowers be fluttering and dancing in the breeze.
Tuna Lasagna
12 sheets of Barilla lasagne
50g of butter
2 onions chopped finely
5 cloves garlic chopped finely
2 cans of chopped tomatoes (400 grams each) drained and blended
2 tsp dried oregano
2 tsp dried basil
1 chicken stock cube
5 tbsp butter
5 tbsp plain flour
500mls non fat milk
150 - 200 grams grated edam cheese
2 tbsp American mustard
1 x 425gram tin of flaked tuna in spring water drained
Salt and pepper to taste
Serve with a light salad
Method:
1. Melt 50 grams butter and sauté onions and butter until soft
2. Add tomatoes, herbs and stock cube and simmer for 15 minutes
3. In a large pan add and when melted stir in flour. Then gradually add milk to make a smooth bechamel sauce. Then add grated cheese and mustard.
4. Then stir through flaked tuna
5. Now assemble with 1/3 tomato mixture, then 1/3 pasta sheets the 1/3 tuna mixture. Repeat twice.
6. Sprinkle with cheese and a light dusting of breadcrumbs.
7. Bake in middle of oven at 160 degrees C for 35 - 40 minutes
