Описание: Meet Pizzaiola & Entrepreneur Miriam Weiskind of the viral Za Report Pizza pop-ups and soon-to-open Yum's of PDX (Portland). A Neo-Neapolitan Pizza passion project brought to life by one of NYC's few female pizzaiolas.

From Pizza Tour Guide to Pizzaiola
Miriam made the jump to her first pizza ovens after spending years as a pizza tour guide in NYC. The more she got to know the pizza personalities and artisan pie shops around the boroughs, the more she felt called to the wood-burning fire. It was her destiny to handle dough and develop her own signature recipes—ones that met her high standards of eating.

Why the Crust Matters
Miriam wants you to finish the crust. To her, every bite should be worth savoring, right down to the last chew. That’s why she spent years perfecting a dough that’s light, airy, and packed with deep flavor. Using a multi-day fermentation process and a blend of different flours, she’s crafted a crust so good you won’t dream of leaving it behind.

More Women in Pizza
Truth be told, the pizza trade is still largely male-dominated, but Miriam is determined to change that. She hopes her journey inspires more women to pick up the peel, push into the craft, and develop their own place in the industry. Through her work, she’s proving that passion, skill, and grit are what make a great pizzaiola—not gender.

A Mother’s Legacy
The Za Report & Yum's of PDX aren’t just about good pizza; it’s about LOVE. During the pandemic, Miriam baked and gave away thousands of pies as a way to build a community, help others, and honor her mother, who had recently passed away. That love for sharing a slice has fueled her expansion.

Now, she’s taking the next big leap, bringing her signature pies to Portland with the opening of her first full-scale pizza restaurant: Yum’s of PDX. Look out for her 2025 launch and don’t miss the chance to taste what makes her pizza unforgettable.
