70g all-purpose flour
1 tsp baking powder
100ml milk
A pinch of salt
30g unsalted butter (melted)
700-800g apples (approx. 4-5 medium apples)
Directions:
Prepare the Base: In a large bowl, whisk together the eggs, vanilla sugar, sugar, and salt until smooth. Pour in the milk and melted butter. Mix lightly to combine.
Add Dry Ingredients: Sift in the flour and baking powder. Mix until you have a smooth, thin batter.
Slice the Apples: Peel and core the apples. Slice them into very thin shavings (using a mandoline is highly recommended for the "invisible" effect). Add the slices to the batter and stir gently until every slice is well-coated.
Assemble: Line a baking pan with parchment paper. Pour the mixture into the pan. Press down on the apples to ensure they lie flat and horizontal — this creates the beautiful layered look.
Bake: Preheat your oven to 180°C (350°F). Bake for approximately 60 minutes until the top is golden brown and the cake is set.
