Claudio Perrando teaches us how to make “Pasta di Riporto”! 🙌
Pasta di Riporto is a type of preferment that, such as sourdough starter, will add different qualities to your bread. If you never heard of it and you would like to try it out, here’s his recipe.
Ingredients:
-Flour (W300-320): 1000gr
-Water: 800gr
-Salt: 23gr
-Olive oil: 30gr
-Yeast: 5gr
1️⃣ Mix all the ingredients in a bowl.
2️⃣ Let it rest at room temperature (24°C-26°C) for 90 minutes.
3️⃣ Take the dough to the refrigerator (4°C-5°C) for 16-24 hours.
