Cha Cua Nuong - Vietnamese Crab Meat Pies
This will make 8 individual pies.
INGREDIENTS:
8 – bowls, 1-cup sized
1 lb of ground pork
1 cup of crabmeat legs (the best whole pieces from the 8 legs)
½ cup of dried wood ear mushrooms
½ cup bean thread clear noodles (Soaked and drained)
3 Tbsps Brown Sugar
½ tsp sea salt
½ Tbsp Granulated garlic
¼ tsp white ground pepper
2 Tbsps Fish sauce (3 Crabs Brand) with other brands you may have to adjust to your taste.
2 Large eggs
Golden-orange crab-color Glaze:
3 Large egg yolks
2 tiny drops of red food color
Honey glaze:
2 Tbsps Honey
2 Tbsps Hot water
